Healthy Happenings: The Magic of Medicinal Mushrooms
Spring is finally here! Spring cleaning inside and out is a great goal right now. For example, you can choose to clean out cupboards and closets and/or start living a clean life. I always advocate starting with a whole foods healthy eating plan (do not suggest any specific diet because we tend to go off a diet and revert to our old SAD-standard American diet). Last year I decided to include medicinal mushroom powders into my healthy eating plan. What I found out was most of our organic mushroom products are grown on oats or rice that is ground up into the mushroom powder increasing the carbohydrates. It also caused my digestive system to react in a negative way. I was able to find a great resource in our RealMushrooms products. The company requests the products be held in the backroom. Benefits of Mushrooms:
- Supports healthy human (and pets’) immune system

1. It is found throughout North America.
2. It is known for its immune-boosting, antitumor, antiviral, antibacterial, and antioxidant properties.
3. The commercial drug, PSK, is derived primarily from mycelial cultures of turkey tail. It is an approved anticancer drug in Asia and has been shown to significantly reduce incidence of cancer recurrence, especially in stomach cancer, when used after conventional chemotherapy and radiation therapy for cervical cancer.

Recipe: Chicken Noodle Bake (Copy Kat Recipes)
6 Tbs unsalted butter, melted 1 cup shredded cheddar cheese
6 Tbs flour (I use barley or spelt) 1 red bell pepper, diced
¼ tsp pepper 1 cup celery chopped
½ tsp Celtic Sea salt ½ cup onion, chopped
2 cups milk (I use natural milk)
1 cup noodles (I use Amish or spelt) cooked & drained
2 cups chicken broth (I use bone broth)
2 cups cooked chicken (I use miller’s chicken)
Directions:
Melt 4 Tbs butter: blend in flour and seasonings. Whisk in milk and 1 cup of the broth: cook until thick and smooth. Stir in cheese.
Melt remaining butter in skillet, sauté onion, peppers, and celery until tender. Add 1 cup broth: simmer for 5 minutes. Add vegetables, noodles and chicken mixing well. Put into a buttered casserole dish. Bake 350 degrees for 30 minutes.
