Health Matters is celebrating our 17th anniversary on April 13th.  We are planning to celebrate with a week-long giveaway starting April 12th.  We will be giving a 10% discount that week and a drawing for two $25.00 gift certificates on Saturday April 17th.  We are so grateful for the support of the community and our loyal customers.

The Village Market 1104 E Fourth St.  I plan to support their efforts in any way possible.

Health Matters & The Monroe Farmers Market has provided foods for customers using the Bridge Card, now customers can access fresh food daily in their neighborhood and also support a local business.

Tonia will be coordinating the Bridge Card/Double Up Food Bucks program at the Monroe Farmer’s Market this year. 

If all goes well, the market should be accepting bridge cards in May.

Healthy Happenings: Spring and Summer Allergies

I hope and pray all of you are thriving in this difficult time.  I see things seem to be moving in the right direction and hopefully we can return to our lives.  I miss people and community most of all. Did you know that approximately 25 million people in the USA have hay fever?  I lived an allergy-free life until I reached my 40’s…you can develop pollen allergies at any age! The symptoms include itchy watery eyes, clear nasal drainage and sneezing. These in turn can cause sleeping problems, fatigue, and poor concentration.  Luckily, there are many natural remedies to combat these symptoms.

  • Dietary Guidelines:

  1. Drink plenty of pure clean water to thin secretions.

  2. Eliminate dairy foods because they can thicken mucus and stimulate and increase in mucus production.

  3. Many people with respiratory allergies are allergic to certain foods like eggs, chocolate, nuts, sea food and citrus fruits and juices.You can eliminate one item at a time for a few weeks and monitor your symptoms.


Anti-allergy Foods:

1.     Ginger

2.     Bee Pollen

3.     Turmeric

4.     Tomatoes

5.     Salmon and other oily fish

6.     Onions



1.     Vitamin C- I prefer fat soluble Ascorbyl Palmitate or liposomal vitamin C.  You can take one or two capsules instead of

4-6 ascorbic acid tablets.

2.     Magnesium can help to relax an overreactive nervous system.

3.     Essential fatty acids found in borage, evening primrose, and flax seeds help to regulate the inflammatory responses. 

4.     B-complex vitamins help to support adrenal function and strengthen the immune system.

5.     Pantothenic acid is exceptional for resolving the acute symptoms of a respiratory allergic reaction.

6.     Probiotics can mitigate the immune system’s response to pollen.

7.     Quercetin is a potent natural antihistamine. It is often sold with bromelain to reduce swelling, redness and itching.

Herbal Remedies:

1.     Stinging Nettle Root is very helpful for drying out the sinuses.  It can be highly effective for chronic allergies.

2.     Saline Nasal spray used 2 times a day can wash away pollen (I prefer the AYR brand) I reuse the bottles and refill with 1 cup of filtered water, 1/3 teaspoon Celtic sea salt and a pinch of baking soda. 

3.     Local raw honey contains pollen from our area are used for allergies and coughs. Experts say it is safe up to 1 tablespoon daily.  If using for allergies it can take a few weeks to a month.  Remember that honey is not safe for infants under 1 year.

 Recipe: Spaghetti Pie

5-6 oz spaghetti                                                                              1/4 teaspoon green or red pepper

2 Tbs butter                                                                                    1 cup diced tomatoes with juice

1/3 cup grated parmesan cheese                                                          6 oz tomato paste

1 cup whole fat cottage cheese (I use Daisy)                                         1 teaspoon xylitol or sugar

2 teaspoons melted butter                                                                  1 teaspoon oregano

1 pound ground beef or turkey                                                           ½ teaspoon garlic salt

½ cup chopped onion                                                                       ½ cup shredded mozzarella cheese


Preheat oven to 350 degrees

Cook spaghetti as directed.  Drain and return to pan and stir in butter.  Stir in Parmesan cheese and eggs.

Form spaghetti mixture into 10-inch pie plate.  Spread cottage cheese over bottom of spaghetti.

 In skillet cook beef or turkey, onion, and pepper, until vegetables are tender and meat is browned.  Drain off excess fat.  Stir in undrained tomatoes, tomato paste, xylitol, oregano, and garlic salt, heat through. 

Turn meat mixture into spaghetti crust.

Bake uncovered for 20 minutes.   Sprinkle with mozzarella cheese.  Bake 5 minutes until cheese is melted.  Serve warm.
