Healthy Happenings: Vitamin Primer
Vitamins are a hot topic right now.  If you listen to commercial radio, television or even read Reader’s Digest you might think vitamins are worthless, however, I have researched the following vitamins and believe they can be of benefit.  It is important to obtain the majority of your vitamins from eating whole foods, whole vegetables, fruits, butter, whole fat milk, nuts, seeds etc.  I have learned that due to growing conditions many of our whole foods are much lower in nutrients.  I feel it is important to supplement but beware of over supplementing.  I take a vitamin break, taking one day off of everything. This gives my body a rest and flushes out my system. Many people feel more is better, but this is usually not true. 
When choosing vitamins a high price does not always mean high quality.  We find the Now, Swanson, and Vitamin Shoppe brands compare to the higher priced vitamins.  One caution we give be careful when purchasing from grocery store, pharmacies, and big box stores etc.  We find they are usually made with fillers, artificial colors and flavorings. 
I will give information on the vitamins I take to stay well.  If you have any health concerns we can assist in choosing the correct vitamins for your concerns.

 

Morning:
 I get most of my vitamins by taking 8 ounces of herbal infusions of oatstraw, nettle and red clover.  
 Way Back Water: Used to hydrate cells within seconds, 95%-98% of all drinking water passes through the body without hydrating the cells. With adequate hydration our bodies can detoxify, facilitates distribution of minerals into all body tissues, helps maintain the body’s PH toward a more alkaline state with healthy PH of 7.35, and regulates body temperature.  I started with 2 ounces twice a day and have worked my way up to taking 10-12 ounces twice a day.  Google Dan Nelson water for more information.
 B Complex 50 is water soluble.  I take ½ tablet 2 times a day to help with anxiety.  If you take a multi-vitamin you can decrease the dose to once a day and take between multi-vitamin doses.
 Vitamin C 1000mg with bioflavanoids is water soluble. I take buffered or Ester C to decrease gastric irritation. I found out all vitamin C comes from China.  If you want to take natural vitamin C we carry Acerola capsules which I hope is not from China.  I take 2 per day unless I am feeling sick then I take 1000mg every hour.   If you develop loose stools you know you have reached your maximum limit and decrease dosage by 1000mg.  Many people can take 10,000 to 15,000 per day.
 Iodine-I use Lugol’s solution 5 drops in a glass of water daily.  Iodine is used to improve thyroid function. You can also get Ioderol which is a combination of Iodine and Iodide in tablet form.
 Vitamin D3-I take 2,000 IU daily.  I was tested using 25 Hydroxy vitamin D test, results should be 35 or above, however, many doctors think 50 or above is more protective.  My levels have increased in the last few years due to taking my vitamin D with meals including fats. 
 Vitamin B12- I take Methylcobalamin 1,000 IU sublingually daily.  Methylcobalamin is the most bio-available form of B12.  B12 taken orally by people over 50 years is not absorbed due to lack of stomach acid.  Most B12 supplements contain the synthetic version of B12, Cyanocobalamin.
 Omega 3-I take Cod Liver oil (which does not taste bad due to the lemon flavor) 1 teaspoon daily.  Cod Liver Oil contains natural vitamin A and natural vitamin D with the higher potency EPA (400) and DHA (500) in each teaspoon.  Most Omega 3 supplements contain EPA 180 and DHA 120, so you need to take 4 capsules for each teaspoon of Cod Liver Oil.  Also when shopping for Omega 3 supplements look for ones that are molecularly distilled to remove toxins and metals.
Bedtime:
 Magnesium-I take 400mg at bedtime to promote restful sleep and to keep my muscles relaxed.  Too much magnesium will work like a laxative so begin slowly.  If this is a problem magnesium glycinate is a form that is easier on the digestive system.

Save the Earth Tip: Vintage Style- the quality of workmanship on vintage clothes (and most other items) is often much higher that on modern mass-produced clothing, so not only will classic clothing generally cost less, it will also last longer than new ones.  Another benefit is minimizing the amount of clothing made in China.  I do not feel as guilty about purchasing second hand even if it is made in China.  I always mention to salespersons that I appreciate and always look for Made in America items. 

Recipe of the Month:
Three-Apple Chicken Salad from Health 2005

4 chicken breasts or 2 cups leftover    ½ cup light mayonnaise
Chicken cut into bite size chunks   2 tablespoons plain yogurt 
¾ cup gala apples-diced    1 ½ teaspoon stone-ground
¾ cup red or yellow delicious apples- diced  mustard 
½ cup granny smith apple-diced   1 teaspoon minced fresh or ½
½ cup thinly sliced celery    teaspoon dried tarragon
3 tablespoons chopped pecans-toasted  1/8 teaspoon Celtic sea salt
       1/8 teaspoon freshly ground pepper

1. Cook chicken breasts until internal temperature reaches 180 degrees.  Cool, and then cut into bite size pieces.
2. Combine chicken, apples, celery, and pecans in bowl; toss gently to coat.
3. Whisk together mayonnaise, yogurt, mustard, tarragon, salt and pepper.
4. Pour dressing over chicken mixture; toss gently to coat. 
5. Drop by tablespoons onto greased baking sheet. 
6. Cover; chill at least 30 minutes.
